Do your kids eat cauliflower willingly? Mine do not, but here’s a trick. David Frenkiel aka @gkstories old recipe for ramson (wild garlic) and cauli cakes adapted for Winter.
Grate 200g (about half a head) cauli
200g quinoa (cooked) but I used buckwheat
2 cloves garlic crushed
200g feta, crumbled
2 bullets frozen spinach, squeezed of moisture
80g oats
4 eggs (I used 2 with the buckwheat)
While the quinoa or buckwheat is cooking, mix all the other ingredients together and mould into little patties.. should make 12 to 16. Fry until golden in hot oil and serve with toasted pitta, flatbreads, chilli jam, yoghurt and whatever you fancy. My veg hater ate 2.
